We are very lucky to have a tremendous wealth of ingredients not just in East Anglia or Suffolk, but on our very doorstep.  Quinces, apples, tomatoes and the odd runner bean come from our neighbours gardens when they're feeling generous.  A very sweet lady in Charsfield has been know to leave rhubarb at my front door, anonymously (but I know who she is!).  Hamish Johnston of the excellent cheese merchant of the same name is our neighbour, as is Mr Denny of The Wild Meat Company.  Indeed most of the game on the autumn and winter menu is shot on local estate by our customers before making its way to us via Paul.

 

With Orford and Aldeburgh less than ten miles away, we are lucky to fresh cod, skate, Dover sole, plaice and herring from Kirk Stribling on Aldeburgh beech and Pinney's smoke house in Orford.

 

For the future, we will be producing more of our own food on our smallholding.
